The following units are taught:
Develop productive working relationships with colleagues
Maintain the health, hygiene, safety and security of the working environment
Maintain food safety when storing, preparing and cooking food
Prepare, cook and finish complex cold desserts
Prepare, cook and finish complex bread and dough products
Prospective learners must:
Be aged 16 or above
Undertake an initial assessment and interview with the Tutor to establish suitability
Have access to a “Real Working Environment” throughout the duration of the course, to enable them to show competence in both knowledge and skills

Learners will be assessed continuously throughout the course by one or more qualified Hospitality Assessors, to evaluate skills competency and subject knowledge. Assessment will be via a variety of methods, including through written assignments and observations. Certificates of unit credit will be provided where the full qualification has not been achieved, for all units completed successfully.
